The racy acidity and ripe apple flavour of Girls’ Night Out Chardonnay makes it the perfect pairing for sweet side dishes like these Honey Glazed Carrots. These carrots are a fantastic compliment to chicken, white fish, and pork.

2 tbsp. unsalted butter
1 tbsp. extra virgin olive oil
6 medium carrots, peeled
1 navel orange
1 cup low sodium chicken stock
3 tbsp. rice wine vinegar
¼ cup honey, divided
½ tsp. cumin
salt and pepper
2 tbsp. freshly chopped chives, for serving

Heat butter and oil in a large skillet with a tight fitting lid. Once hot, add the carrots and sauté until bright orange, about 5 minutes.

Add the juice from the orange, chicken stock, vinegar, half of the honey, cumin and season with salt and pepper. Stir to coat.

Bring to a boil and cover. Cook covered for 15-18 minutes until carrots are tender. Remove the lid and reduce the liquid by half. Stir in the remaining honey and adjust salt and pepper to taste.

Remove from the heat and transfer to a serving dish. Sprinkle with freshly chopped chives.
