Get the party started with these easy Caribbean spiced shrimp skewers. Serve as an appetizer or main at your next barbecue.

Serves: 4 (makes 8 skewers, 2 per person), or 1 per person for an appetizer

Ingredients:
1 cup Girls’ Night Out Coconut Lime Calypso
2 tbsp. prepared jerk seasoning
2 tbsp. soy sauce
2 tbsp. honey
2 tbsp. canola oil
24 large shrimp
1 red pepper, cut into 16 chunks
1 green pepper, cut into 16 chunks
16 pineapple chunks
lime wedges

Directions:
Stir wine with jerk seasoning, soy sauce, honey and oil until combined. Toss shrimp, red pepper, green pepper and pineapple with marinade. Let stand, refrigerated, for 30 minutes.

If using wooden bamboo skewers soak in water to avoid burning. Evenly thread shrimp, red pepper, green pepper and pineapple onto 8 skewers; set aside.

Preheat grill to medium heat; grease grate well. Grill skewers, turning occasionally, for 2-3 minutes per side or until shrimp is cooked through.
