Ingredients:
1 tbsp. canola oil
2 lbs. mussels, scrubbed
1 small Spanish onion, finely chopped
1 garlic clove, minced
½ inch ginger, peeled and minced
¼ cup Girls’ Night Out BFF White
2 cups low fat coconut milk
2 tbsp. prepared green curry paste
1 tbsp. fresh lime juice
salt and pepper
scallions, chopped for garnish
cilantro, chopped for garnish

Directions:
Heat oil in a large saucepan over medium-high heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and ginger, cook for 30 seconds. Add green curry paste, stir for 1 minute. Stir in BFF White and coconut milk, bring to a boil.

Add mussels, stir once and cover the pot with a tight fitting lid. Cook for 3 minutes, stir and continue to cook for another 3 minutes until the mussels have opened. Stir in lime juice.

Discard any mussels that have not opened. Divide mussels between warm bowls. Sprinkle with freshly chopped scallions and cilantro.
