Chicken and Artichoke Salad Cups

Get your backyard or condo patio party started with these sweet little salad cups. Not too big, and not too small, they’re just right for summer entertaining. Get the gang together and don’t forget to serve with Girls’ Night Out Sangria and Lemon Iced Tea.

Ingredients:

1/4 cup (60 mL) Parmesan cheese

2 tbsp (30 mL) olive oil

1 tbsp (15 mL) lemon juice

1 tsp (5 mL) minced garlic

1/4 tsp (1 mL) pepper

3 cups (750 mL) shredded rotisserie cooked chicken

1 jar (170 mL) marinated artichokes, drained and chopped

24 Boston lettuce leaves

1/2 cup (125 mL) crumbled goat cheese

1/4 cup (60 mL) finely chopped sun-dried tomatoes

Directions:

  1. In bowl, whisk together Parmesan, olive oil, lemon juice, garlic, and pepper. Toss with chicken and artichokes.
  2. Spoon chicken mixture into lettuce leaves; sprinkle with goat cheese and sun-dried tomatoes.

Fun idea:

  • Self-serve stations. Instead of assembling all of the cups in advance, present the chicken mixture in a cute bowl and let your guest fill their own cups with as little or as much as they’d like.
